Turkish Chicken Vermicelli Soup - Tavuklu Tel Şehriye Çorbası

Türkiye has over 300 soups and Tavuklu Şehriye Çorbası is one of the most comforting ones (especially since it's often made for someone who's sick). Made with shredded chicken, vermicelli and a rich organic broth, this simple soup only takes about 30 minutes to come together. Add fresh parsley and lemon and boom, you got yourself a delicious fresh soup!
Ingredients
✿ 2 tablespoons olive oil
✿ 1 tablespoon flour
✿ 1 tablespoon mixed tomato and pepper paste
✿ ½ teaspoon black pepper
✿ 1 teaspoon salt (or to taste)
✿ ½ teaspoon Turkish red chili flakes (pul biber)
✿ 2 cups chicken broth
✿ About 1 liter hot water
✿ 1 Turkish tea glass vermicelli (approximately 50–60 grams)
✿ 1 cup shredded cooked chicken
✿ A handful of fresh parsley, finely chopped
Instructions
Add the olive oil to a large pot over medium heat
Stir in the flour and toast for about 1 minute, until it smells nutty and lightly roasted
Add the tomato and pepper paste and cook for another minute, stirring constantly
Season with the black pepper, salt, and Turkish chili flakes, then give everything a quick stir
Pour in the chicken broth and hot water. Bring the soup to a gentle boil
Add the vermicelli and shredded chicken
Let the soup simmer for about 5 minutes, or until the vermicelli is tender
Remove the pot from the heat and stir in the fresh parsley
Serve immediately while hot
