Nergizleme – Turkish Egg Salad from Diyarbakır

If there’s one Turkish salad that deserves more attention, I think it might be Nergizleme. This traditional egg salad from Diyarbakır is almost ridiculously simple: boiled eggs, plenty of fresh parsley and spring onions, a few spices and good olive oil. No complicated dressing, no long list of ingredients and barely any cooking.

The richness of the eggs, freshness of the herbs and spring onions, warmth from the pul biber and cumin and that generous drizzle of olive oil make this the kind of recipe you can throw together in minutes but actually want to make again and again. It’s also ready in around 10–15 minutes, which makes it perfect for a quick lunch, breakfast or something to add to a larger Turkish-style spread.

What is Nergizleme?

Nergizleme is a traditional egg salad associated with Diyarbakır in southeastern Türkiye. The official Culture Portal of Türkiye’s Ministry of Culture and Tourism documents the Diyarbakır version using boiled eggs, fresh spring onions, parsley, pul biber, salt, lemon and olive oil, with dried basil or black pepper as optional additions.

It’s an especially interesting dish because of its connection to spring. According to the Ministry’s Culture Portal, Nergizleme is generally prepared during springtime. Another Ministry page on traditional Turkish egg dishes describes yumurta piyazı as a spring dish that would be wrapped in yufka bread and eaten during outings to the countryside. In some regions, it is also associated with Nevruz celebrations.

Why is it called Nergizleme?

The name has a particularly beautiful explanation. According to Türkiye’s Ministry of Culture and Tourism, the salad is called Nergizleme because its colours resemble the nergis flower, the narcissus or daffodil.

When you look at the finished dish, it makes sense: the white and yellow of the boiled eggs alongside the bright green spring onions resemble the flower and its green stem.

There are also local legends surrounding the origins of Nergizleme in Diyarbakır, but rather than treating those stories as established historical fact, I think they’re best understood as part of the local folklore that has grown around the dish. What we do know from official Turkish culinary sources is that Nergizleme has a place in the traditional cuisine of Diyarbakır and is closely connected with springtime.

My version is slightly different from the official recipe. I add cumin and black pepper and leave out the lemon, keeping the dressing incredibly simple with good-quality olive oil.

Serves: 2 as a meal, or 2–3 as a side

Prep time: 5 minutes

Cooking time: approximately 10 minutes

Ingredients

✿ 6 eggs

✿ 3–4 spring onions, finely chopped

✿ 1 generous handful fresh parsley, finely chopped

✿ ½–1 tsp pul biber, depending on how spicy you like it

✿ ¼–½ tsp ground cumin

✿ ¼ tsp freshly ground black pepper

✿ Salt, to taste

✿ 1½–2 tbsp good-quality olive oil, plus more if needed

How to make Nergizleme

  1. Place the eggs in a saucepan, cover them with water and boil until hard-boiled. Once cooked, transfer them to cold water and leave them for a few minutes until cool enough to handle.

  2. While the eggs are boiling, finely chop the spring onions and parsley.

  3. Peel the cooled eggs and cut them into fairly large chunks. You don’t want to chop them too finely — keeping the pieces chunky gives Nergizleme its texture.

  4. Add the eggs to a large bowl, followed by the chopped parsley and spring onions.

  5. Season with pul biber, cumin, black pepper and salt.

  6. Gently mix everything together, being careful not to completely break apart the pieces of egg.

  7. Drizzle over the olive oil and gently toss everything together once more.

  8. Taste and adjust the salt, spices or olive oil if needed, then serve.

A few tips

Keep the eggs chunky. This isn’t the kind of creamy egg salad where everything gets mashed together. Larger pieces of boiled egg give Nergizleme much more texture and make the finished salad look beautiful too.

Use plenty of fresh herbs. Don’t be shy with the parsley and spring onions. They’re what give such a simple salad its freshness.

Use an olive oil you actually like. There are so few ingredients in this recipe that you really taste each one, so this is a good time to use a nice-quality olive oil.

Adjust the pul biber to your taste. Start with half a teaspoon if you prefer things mild, or add more if you want a little extra heat.

Make it your own. Traditional versions can include lemon, dried basil and black pepper. My version uses cumin and black pepper and skips the lemon.

How to serve Nergizleme

Nergizleme is delicious on its own for a quick breakfast or lunch, especially with fresh bread on the side.

You can also serve it as part of a larger spread alongside other salads, vegetables, cheeses and bread.

Because this recipe uses six eggs, I’d say it comfortably serves two people as a main part of the meal, or around two to three people when served alongside other dishes.

Afiyet olsun! 🤍
