Homemade Gözleme with Spinach, Bell pepper & Feta

Gözleme is one of those foods that instantly transports you to the streets of Türkiye. I wanted to make a version that's easy, delicious & fully vegetarian. We usually prep this with the family, so everyone gets to take some home and freeze them.
Ingredients
For the dough
✿ 600–750 g plain all-purpose flour
✿ 450–500 ml water (lukewarm)
✿ 10 g active yeast
✿ Salt, to taste
For the filling
✿ 1 kg fresh spinach, chopped
✿ 150 g Turkish feta cheese, crumbled
✿ 1 red bell pepper, finely chopped (mini cubes)
✿ 1 green bell pepper, finely chopped (mini cubes)
✿ Salt, to taste
✿ Black pepper, to taste
✿ Olive oil
Instructions
Dissolve the yeast in a small amount of lukewarm water and let it sit for 5 to 10 minutes until foamy.
In a large bowl, mix the flour and salt, then gradually add the remaining water and knead until the dough is smooth and elastic. Cover and let it rest for about 1 hour until it doubles in size.
In a different bowl, combine the chopped spinach, crumbled feta, red and green bell pepper. Season with salt and black pepper and mix well. Add some olive oil to bind it all together. The filling stays fresh and raw, giving the gözleme a crisp and vibrant flavour.
Divide the dough into small balls about the size of a tennis ball. Lightly flour your work surface and roll each ball into a thin circle about 20-25 cm in diameter.
Place a generous portion of the filling on one half of the rolled dough, leaving a small border around the edges. Fold the other half over the filling and press the edges firmly to seal.
Heat a non-stick skillet or griddle over medium heat. Place a gözleme on the skillet and cook for 2-3 minutes on each side until golden and slightly crispy. Repeat with the remaining dough and filling.
Cut the gözleme into wedges and serve immediately. You can add a squeeze of lemon or a side of yogurt if you like.
