Delicious Turkish Vermicelli Soup “Tel Şehriye Çorbası”

Türkiye has over 300 soups, and I’m on a mission to try them all! Today, we’re making Tel Şehriye Çorbası, a simple yet flavourful Turkish vermicelli soup. I’m not saying this lightly, but so far, every soup I’ve tried has been my favourite. This one is no exception!
Ingredients:
- 2 tablespoons vegetable oil 
- 1 tablespoon tomato paste 
- 1 teaspoon dried mint 
- 6 cups (1.5 liters) boiling water 
- ½ cup vermicelli pasta (tel şehriye) 
- Salt & black pepper to taste 
Instructions:
- In a pot, heat the oil over medium heat. 
- Add the tomato paste and sauté until fragrant. 
- Stir in the dried mint and sauté for a few more seconds. 
- Pour in the boiling water and let the soup simmer for about 10 minutes. 
- Add the vermicelli and mix well. 
- Let it cook over medium heat for another 10 minutes, or until the vermicelli is soft. 
- Season with salt and black pepper to taste. 
While making this, my mom was fasting and craving this soup—the scent filled our kitchen, but we still had a few hours left before we could break our fast!
